As in China, where chinese food is just called ‘food’, in the outdoors wild food is just ‘food’ – the millions of species of plants, fungus, and animals that inhabit this planet and escape our culinary lexicon. The non-agri-species. “Three-quarters of Earth’s food supply draws on just 12 crops and five livestock species” (Smithsonian Magazine) 8.7 million species is a current estimate of species on earth. In a foodie era of everybody knowing everything about everything when it comes to food and having an instagram post to prove it – the bottom line is we know jack about food. Maybe 1/10,000th of a percent. One of many reasons we’re still at it in S6. We thought we knew food too.
