Velvet shanks or enoki (Flammulina velutipes) picked by street light this evening for further wild #vodka experiments…!! They have a naturally sweet taste, even hints of butterscotch to some palates… so, inspired by Peter’s beefsteak fungus vodka and Mina’s velvet shank buttercream, I’m chucking these slimy winter beauties in vodka, adding some sugar and trying for an interesting liqueur…!! Wish me luck haha 😉

    Is that ok? as this one needs to be thoroughly cooked unlike beef tongue.

    I know many folks dry them before placing in alcohol, have you noticed any difference using fresh specimens? You give me inspiration to try this with a few alternative species!
