‘Blooming beautiful’ wild crêpes I served in the foraging marquee after my taster walks at Ballantrae Festival of Food & Drink: hogweed-seed-spiced pancakes covered in warming magnolia-petal syrup, a bilberry, wild cherry & bramble coulis, elderflower sugar, a squeeze of fresh lemon, wild bronze fennel fronds and a plethora of stunning edible flowers foraged from Susan’s gorgeous gardens at Cosses Country House where I was lucky enough to stay this weekend… will add crumbled meringue too next time I think! 🙂
