Drying wild oysters for a savoury fungi and seaweed seasoning powder : I found a bunch of fresh oysters which had all but already slowly dried out on the tree, so I gently pulled them into shreds and dried them on kitchen paper above the radiators, which didn’t take long as they were already fairly dessicated despite being young fruit bodies, it’s been really dry this last couple of weeks : I’m going to keep a few pretty pieces for rehydration and eating later in dishes, then will grind the rest up with pepper dulse seaweed, sea lettuce, laver, and alexanders seeds to make an earthy, peppery, iodiney, salty umami hit to add to future meals 🙂
