Here’s just a taste of the foraging fun I get up to, the places I visit, and a few of the wonderful wild edibles I’ve been finding in Yorkshire, UK and Europe recently. If you click on a picture, you can find out more information about it over on my Instragram feed (which is where they’re coming from). Do follow me if you like and I hope you enjoy my gastronomic outdoor adventures as much as I do!

🍃 RAMSONS, DILL & GHERKIN 'KRAUT 🍃 • I've 🍃 RAMSONS, DILL & GHERKIN 'KRAUT 🍃 • I've helpfully** made a video of literally the last 2 minutes of making this ferment & none of the rest of the process... 🤦‍♀️🤣
It's just a really straightforward sauerkraut method to make this... tob the tube of:
Sterilise the bowl, tamper, jar, knife & board etc with boiling water... then wash your hands very well (not with boiling water!)... remove outer leaves on cabbage; rinse & shake off your wild garlic leaves very well; then chop all your veg, weigh the prepped veg, then add 30g good sea salt per 1000g veg, massage it all in a big bowl until all the juice comes out to make the brine.
Squeeze out handfuls of 'kraut and pack tightly into your vessel; use a tamper or your fingers to press it all down with minimal air gaps; pour over the brine which will hopefully more than cover your veg (make more brine if needed with bottled water or boiled & cooled tsp water); weigh down with fermentation weights or a double zip bag full of clean water (I forgot to bring mine over hence not being in the video, so I'm getting them tmw) and watch it bubble & blip for at least 5 days; keep tamping it down to squeeze out the gas & keep everything under the brine, or the tips might get mouldy; keep it in a cool but not cold place while fermenting
You can eat it after about 5 days, and then keep eating it from the fridge for weeks, and/or put it into smaller jars for the fridge, it will slowly get more sour though, so keep checking it and burping the jar occasionally.
Good beasties for your gut microbiome! 🦠🍃⭐️
A nice this to do with my first wild garlic, and I'll be making pure garlic ones soon, sooo tasty.
Happy foraging & fermenting!

🍃 PICKABLE WILD GARLIC 🍃 • I'm loving star 🍃 PICKABLE WILD GARLIC 🍃 • I'm loving starting to find ramsons leaves of a size I can justify harvesting a few from 💚
It's so joyful having *green* in my feed and my foraging life again (and feeling their squeaky fresh texture!) 🍃
Nothing much else was going on there, I had hoped for some jelly ears & scarlet elf cups, but not this week at this spot 🤎
I spotted the teenie baby elf cups yesterday in Leeds so that delightful (unf my phone was dead so no photo) 🔴
I had hoped for dandelion greens too today but they weren't up yet at this spot... though I've seen them on many a road verge in passing for theast couple of weeks, so they are slowly popping up around here & I'll keep checking my cleaner locations for signs of life 🍃
Yay, things are emerging! ✨️

🍃 FIRST WILD GARLIC 🍃 • I'm actually a bit 🍃 FIRST WILD GARLIC 🍃 • I'm actually a bit late in going out searching for the first signs of the wild garlic emerging locally, I usually check on it much earlier on... but I got a chance to take a peek on Friday & was delighted to see a few pioneering shoots popping up 🍃
That *SMELL* ~ it took me straight from winter slumber into spring anticipation! 🍃
Wonderful 💚🍃
A little heads up... myself & some of my fellow Wildbiomers are planning to *GO WILD* again for the month of April... want to join us, just for fun?
More on that soon, as it's a way off yet, but if you have some wild stores saved up at home & know how to forage enough to live on in your locality, do start thinking about joining in, wherever you are based!
(Buying certain things is fine too, as long as wild & un-messed- with, like venison, woodpigeon etc, and spring substituting wild birds' eggs with organic hen eggs in limited amounts, but mostly what you can forage in season is key to this)
It's a fantastic challenge, to only eat wild species from your part of the world for a while. It felt amazing last time I did it, so I'm really looking forward to it 🍃🤘 #WildApril

🌼 DANDELION LEAVES 🌼 • I've been craving f 🌼 DANDELION LEAVES 🌼 • I've been craving fresh wild greens this week, but there's not much about yet in terms of regrowth, however the dandelions are in new leaf just now & so I'm really enjoying having them on my plate again despite it being midwinter 🌱🍃
Their bitterness and the zillions of microbes naturally covering these leaves are great for your gut community (and dande leaves really aren't that bitter when they're this young) so they're fab added to salads or wilted in stirfrys etc 🌼🍃
Its current designation as a 'pesky weed' in many people's minds these days is a tragedy! This is such a sad and limited view of such a plant! Dandelion is incredibly nutritious, an excellent source of vitamin A, B, C, D and K, and minerals iron, potassium, and zinc and has been eaten as food and a herb for centuries 🌼🍃
The whole plant is incredible to be honest - info online tells me the good vitamin C content in dandelion helps improve the immune system, the slightly bitter leaves help to stimulate the appetite and help digestion, and dandelion flowers have antioxidant properties (I love making vegan 'honey' from them!). Herbalists regularly use dandelion root to detoxify the liver and gallbladder, and dandelion leaves to help kidney function.
An amazing 'weed'... do become friends with it if you're not already! It's do abundant in the UK and available for many months of the year (you can also grow it deliberately in protected pots or greenhouse beds over winter if you want!) 🌼🍃

🔥 WINTER SOLSTICE BLESSINGS 🔥 • beautiful 🔥 WINTER SOLSTICE BLESSINGS 🔥 • beautiful nacreous clouds were gracing our skies today, in the UK, loads of folk were spotting them this morning, catching the sunlight.. wow, how gorgeous? 🌈☁️❄️
Nacreous clouds are polar stratospheric clouds that can form only when the sky's temperature drops below a chilly -78 °C. This means they're normally visible in the UK only in the coldest part of winter. Storm Pia is putting on a show in the stratosphere it seems (despite being unseasonably mild at ground level today) 🌬🌈
This is a time for being cosy indoors, or enjoying the invigoration of crisp cold wind of your face while out for a walk, (or both!) ~ the winter solstice is our shortest day & longest night... with hope rising from tomorrow (the wee early hours of tonight see the exact solstice moment, 3:27am) as the sun rises on Friday morning, knowing the daylight will slowly lengthen out again & we will eventually be heading back towards spring, and all the new life, vibrancy & abundance it brings with it 🌱
But for now, hygge & fire-lit cosiness, togetherness, solitary reflection, peace & enjoying my seasonal downtime with relish (and maybe still finding some winter chanterelles & wild medicinal fungi out there!) 🔥
Solstice blessings to you all ❄️
I hope you can see a sunset tonight or sunrise tomorrow from where you are too 🌅

🍂🖤 BLACK TRUMPETS 🖤🍂 • gorgeous day 🍂🖤 BLACK TRUMPETS 🖤🍂 • gorgeous day in the woods with lovely @leannedwns, my dear sister @jahne8 & my youngest nephew 🍂
A sunny morning stroll spotting slug highways down mossy tree trunks & clusters of mushrooms with the wee lad, he's amazing at noticing tiny details & all manner of minibeasts, but also no puddle remained unsploshed, no lichen untouseled & no mud patch unsquelched, perfect playtime in the coppery-carpeted forest together! 💕🍂
Leanne & I then went to another spot to hunt black trumpets, and we weren't disappointed! The dance of foraging joy most definitely happened 🖤
We found quite a few in some known patches of mine, but then, on the way out, when it was starting to get a bit dark, we came upon a big flood across our planned path out of the wood... after consulting a map online we chose a different diversion, and happened upon a gloriously dense spread of middle-aged trumpets, only about a 2m circle, with *hundreds* of perfect horns! Total serendipity 🍂
Happy days and thank you for all the beautiful photos Jane & Leanne (as I totally failed to take any!) xxx 🖤

🍂 IT'S STILL MID-AUTUMN* 🍂 • (*down south, 🍂 IT'S STILL MID-AUTUMN* 🍂 • (*down south, anyway!) • it was wonderful to bimble about in southern woodlands with my dear friend Leanne @leannedwns for a couple of days seeing zillions of mushrooms everywhere, the temps & season stage being a few weeks behind Yorkshire in winter approaching 🍂
To be fair, it was an amazing mix of early autumn species flushing again due to the mild weather we've mostly had of late, as well as the ones only triggered by the occasional colder snap, so the bounty was just fabulous! 🍂
Plenty of emerging winter chanterelles, young pristine hedgehog mushrooms, a few amanitas and russulas popping back up, there were butter caps & mycena everywhere, amethyst deceivers galore, various crusts & corals, including a vibrant pink disco encrusting a dead beech branch... not many boletes, milkcaps or girolle chanterelles, but there were plenty of baby black horns coming up, with a few patches still having fabulously large ones presumably from a few weeks ago, ahhh it was so joyous! Edit: we also spotted an aging zoned rosette (Podoscypha multizonata) which is reasonably rare, a lovely thing to see again! (see slide 7) 🍂
It got dark way too early, but it's amazing how long into the twilight you can still pick out the hollow centres & frills of black trumpets & winter chanterelles in low light, even though they're so camouflaged... I never give up until I really *really* can't see anything haha!! 🍂
Thank you for a lovely couple of days, so good to catch up & enjoy a bit more autumn dopamine before I headed back north! 🍂

DUSK IS FALLING SO EARLY! • it's becoming imposs DUSK IS FALLING SO EARLY! • it's becoming impossible to forage for most things without a torch after 4:30pm these days
This weekend I went out to play with Anna @southern_red, Mat @matsmithphotog and their chum Sophie (and Truffle the wee dawgo), seeking black trumpets, winter chanterelles & hedgehog mushrooms until it was too dark to see 👀
Mat captured this beautiful portrait of a heathy pine tree just as the last of the daylight faded, love that! 💙

💜 WOOD BLEWITS 💜 • the blewits are coming. 💜 WOOD BLEWITS 💜 • the blewits are coming... we saw both Lepista nuda (wood blewit) and L. sordid (slender blewit) on yesterday's foray, and there's a field blewit patch I'll check today in case we can get the hat trick 🍂
This is an old photo, the blewits we spotted yesterday were mere pinheads, baby buttons 💜
The trees still have so much greenery still on them... it's so strange, given the blewits are typically full size here by now and waxcaps are usually colourfully on show too out on the exposed grassland in early November, but there's hardly any yet... it's been pretty mild so far this late autumn 🍂
Let's see what today brings! 💜

🦁 SAMHAIN BLESSINGS 🦁 • just look at this 🦁 SAMHAIN BLESSINGS 🦁 • just look at this stunning lion's mane mushroom found by Sam @ somersettruffles (and his very smiley doggo who totally matches their fab find in the woods of south-western England this week)! 🤍
Hericium erinaceus, bearded tooth, monkey's head or lion's mane fungus, is critically endangered & is one of 4 fungi protected by law in the UK, illegal to touch, pick, damage or move its substrate or disturb in any way 🦁
If you are lucky enough to see one of these sea anemone-like beauties in the wild, marvel & be well chuffed, do not disclose its location publicly, but please consider contacting local fungi recorders to get noted & add to data about this gorgeous fungus in the UK 🤍
In the wild it lives on fallen / dead / standing beech & oak, such ancient broadleaf wood habitat being constantly threatened by urbanisation, farming & heath/forest fires 🦁
Being a wood-eater, it can also be cultivated fairly easily, so if you fancy trying some non-wild lion's mane (it's incredibly medicinal & powerful, especially for maintaining, protecting, regrowing & repairing myelin sheaths on neurons & nerves in the body & brain, known to be useful for treating, preventing & managing MS, Alzheimer's and demetia) you can buy it fresh, dried, extracted, or grow some yourself! 🤍
Thank you Sam for your blessing to share your incredible find 🦁🙏🏼
I was awed & delighted to see many superb examples of its cousin, coral tooth, Hericium coralloides, in southern Sweden in August, look back in my feed to see those, like frost sculptures or coral skeletons, just incredible & also protected by law in the UK

🧟‍♂️ HAPPY HALLOWEEN! 🧟‍♂️ • * 🧟‍♂️ HAPPY HALLOWEEN! 🧟‍♂️ • *loving* these spooky devil's fingers or octopus stinkhorns & their revolting red-veined witch's eggs that my fab fungi friend Steve @accidentally_steve found daan saaf!
Aren't they superb?? 🐙🤘
Clathrus archeri, giving Little Shop Of Horrors a run for its money #FeedMeSeyour! And the monster from #StrangerThings of course! 🐙✨️
Reeking of sunkissed roadkill, these creepily colourful tentaculas emerge from a smooth white 'egg' in the grass of many a heathland habitat in southern England, the thin-skinned 'shell' splitting open to reveal a sticky semi-seethrough jelly layer, looking amazingly shiny in that first image, just hinting at the furled up fingers inside, until they expand so much that they burst out, 'Alien' stylee, covered in a smelly black goo attracting flies to carry spores elsewhere on their tiny feet! 🤮😆
Somehow arriving here from New Zealand, they aren't common in the UK but can be locally abundant... unbelievably the egg stage is edible I hear, but I'd say they're a bit too rare for the table really 🐙🍄

Deliciosus being very robust, with clear & numerous pockmarks on the stem, with strong oranges throughout, alongside these suspected quieticolor with their finer features, thinner caps, unblemished stems, easier greening & more muted colours overall 🧡
