I’ve found that if you add a few bits of moss to your chanterelles in an airtight container in the fridge (and even outside of the fridge in a coolish place) they stay in the condition you picked them in for a long time…
I harvested these golden chappies at least 10 days ago and they haven’t changed at all. I’ve stored chants for up to a month like this (and not longer because I’d eaten then all lol!) I’ve not tested it with softer or more watery shroomage though…
The moss regulates the moisture levels in the space it seems. I’ve used fern fronds and green beech leaves before as well… similar results, but I like moss best as I usually find chants surrounded by loads of it! Years ago I used to put kitchen roll in and keep changing it daily as it gets saturated but this is much better (and less effort!) I find.
Please note: I never pull the moss up (and this is against the countryside code anyway) I clip a few tips from an abundant area or ideally use a clump of moss already pulled up by an animal or something… and afterwards I line pots and hanging baskets in my garden with it 🙂
