Making flowering currant blossom syrup – the blooms from this one bush I found locally are particularly sweet! Flowering currant (Ribes sanguineum) blooms can be a lot more savoury, tasting of sage or thyme (and can even smell of cat pee :/ eyw haha!) but these ones are totally deeelish 🙂

I’m not sure which cultivar this one is but these flowers are very pleasant raw, and are a lovely deep colour too.

I added a couple of spoonfuls of bottled mineral water after this too, to just moisten the sugar a little and help the flowers along. I may make one with dandelion petals in also…

It takes a while to work so I may have to heat a portion of it with some extra water (or birch sap!) to hurry it along so I can use’m planning to use this as a cordial for a private course I’m doing on Saturday… we’ll see!
