Mmm wild macarons… made with ground almonds & foraged hazelnuts with a blackberry & elder white chocolate ganache filling and a hidden hogweed seed-spiced macerated blackberry in the centre. They might look a bit messy but they certainly taste awesome haha!
Not bad, not bad… given I’ve not attempted these in my current (crappy and totally unreliable!) gas oven before, and I was using a hand mixer to make the meringue part not a standing one, I think it went okay! Just need to perfect how to get the best out of this particular oven given that I’m kinda stuck with it for now… electric ones are much more reliable for a more even bake… a couple of them caught slightly and coloured but generally I’m quite pleased… but I want to get that edge crust perfect next time! 🙂 Any tips, dear hive mind? X
