My first maitake of the season… hen of the woods (Grifola frondosa) is one of my all-time favourite eaters, being both delectable and often generous… just one can feed you, a family or a group for days!! This one was perfect too.
As well as being delicious, maitake is also believed to provide medicinal benefits as you eat it. Early studies suggest maitake may have potential benefits for cholesterol and blood sugar levels, immune function, and cancer treatment and prevention (though as always, do your own reading/research and seek advice from a qualified medical herbalist before taking anything medicinally).
I’m looking forward to enjoying this one, as last year was rubbish for hens, so it’s been nearly 24 months since I last had any!!
