Spoot starter experiment… erm not quite what I was going for in my head, mk2 will be better haha! Started with too much potato puree base for the sauce so sion realised I hadn’t picked proportionally nearly enough wild garlic leaves to get the depth of green I was wanting, and then added too much cream as well…!! (D’oh). But hey, it tasted nice enough all the same. Razor clams sautéed in white wine & butter, with crispy-fried wild garlic flowers and stems, wild chervil fronds, pink sorrel flowers & three-cornered leek flowers, with a velvety wild garlic, three-cornered leek, sweet cicely & common sorrel sauce. Apologies for the nasty yellow light too!!
