Trying out a sea buckthorn toffee today, inspired by the lovely Monica Wilde’s version I was blessed enough to sample recently 🙂 I didn’t have quite enough sea buckthorn juice for the recipe, so I topped it up with some fresh crab-apple juice as that’s tangy too. It’s come out rather well, with a detectable tang of sharpness within the sweet toffee and caramel notes. Definitely going to keep refining this, and might do a pure crab-apple one too as I have more juice left…
