I’m hoping to make these gorgeous, aromatic lilac cakes again this weekend… I found the most stunning tree last spring which has HUGE flowers, it’s just amazing… so I’m just waiting for it to come into full bloom! I made the batch in this picture for a WI group I was doing a private foraging course for last spring (not daunting baking for the WI at all!!!) and thankfully they went down very well (phew!) 😉 The flowers are a little bitter eaten alone but I find they taste amazing when added to sweetness, either in the cake mix and icing as I did here, or in a syrup. I’ve just finished a double-infused lilac syrup and will add some to a vodka too I think… yummm!! Why not try experimenting with lilac blossom yourself while its having its short flowering period? 🙂 Do let us know how you get on! #foraging #wildfood #lilac #cupcakes
