Brilliant day foraging & enjoying a post-walk wild feast for Niki’s Zen Do in North Yorkshire yesterday afternoon: foraged quince paste (membrillo) with manchego & crackers; wild pickles including magnolia petals, green ash keys, daisy bud capers, and baby chanterelles; wild raspberry vodka, sloe gin; raw birch sap to drink, and birch sap syrup to sample; a foraged salad with 10 types of leaf & 10 types of edible flowers, in an elderberry vinegarette; sautéed grey oysters mushrooms, jelly ears & scarlet elf cups with crunchy hogweed shoots scattered with flowering currant blooms on fit bread; wild syrups including aronia berry, rosehip, rose petal, and sweet cicely; fresh nettle tea, and vegan/raw sweet nettle seed & kelp balls rolled in sesame seeds
