Pickling magnolia petals and flower hearts this evening… and the house smells of deeply warm, ginger spiciness… the sweet-and-sour rice vinegar pickling liquor already tastes divine, and will hopefully continue to improve with time. I’ve not tried using the little ‘pineapples’ in the heart of the magnolia flowers before, but research online suggests that some cultures pickle/eat the whole bloom, and they’re just as well-flavoured as the petals, and aren’t too tough or woody, so I’m giving it a try…! I’m hoping they’ll be a bit crunchy & have a good bite to them, and be interesting to eat, maybe with a nutty cheese like comté… we shall see! They certainly look fab, anyway 🙂
